After all who wants to spend hours slaving away in the kitchen when friends are round for lunch, the garden is in bloom and the wine is chilled and ready to pour. But before you start to cook you save a lot of energy by buying the right ingredients for a simple salad. That way you don?t need the heavy bottled sauces and dressings to make a great flavor
Do you really want to take a beautiful crisp summer salad and soak it in a mixture of fat, sugar, salt and chemicals? If you start off with great food and don?t do too much to it you don?t need all these strong tastes as you still have great food.
All you need is to combine it well so that the flavors work together, have a nice crunchy texture and add a little light dressing to set it all off, and let the taste buds do the rest Freshness is, as in all cooking, the way to a good salad. Don?t take what the supermarkets give you. Although it?s easier to pick up the ready packed tomatoes, cucumbers, onions, bell peppers etc.
To make sure you get the best, take a minute or two and pick over the vegetables, choose what is firm ripe and ready to use. The same of course applies with meat and fish. There is a reason why supermarkets prepackage, and it?s not always convenience. So choose well, cook quickly and simply and your friends won?t have finished the wine by the time you get there! Enjoy a little bit of summer now with this easy poached chicken salad.
Easy poached chicken salad
Ingredients:
4 chicken breasts (skinless)
1 finely sliced red onion
1 whole half onion
4 good ripe tomatoes sliced thickly
250 grams/4ozs salad leaves mixed
4ozs raisins soaked in hot water for ten minutes
1 half lemon
2 fresh or dry bay leaves
1-teaspoon peppercorns black
1 small French, stick loaf or similar sliced into 1/2 slices
For the dressing:
1/4 cup olive oil
1clove garlic crushed
1/2 dessert spoon Dijon or other mild mustard
2 tablespoons balsamic vinegar
To make the dressing, whisk the vinegar and mustard together with the garlic, slowly add the olive oil while whisking and season with salt and pepper to taste.
Bring a pan of water to the boil with the bay leaves, 1/2 white onion, lemon and peppercorns.
Carefully add the chicken and simmer gently until cooked, if you unsure it is worth investing a few dollars in a meat thermometer. The temperature should be at least 75 celcius/167 Fahrenheit, put the sliced bread on a baking tray and drizzle with the olive oil and season with salt.
Bake in a medium oven until crisp but soft in the middle. Mix the leaves together with the onions and raisins. Turn in the salad dressing and put into 4 good-sized bowls. Place slices of tomato and bread around the edge. Slice the warm chicken at an angle and put attractively on top off the salad. Sit back, enjoy and get someone else to do the washing up.

When trying to lose weight, there are certain foods that each person is more attracted to than other foods. Some find the morning cup of coffee quite addictive. To others it is bread. Many cannot have dinner in a restaurant without having an alcoholic beverage. With me it was always something sweet.
Tally
A good first step is to tally the number of times you consume each category of food in a seven-day period. Then, after the next seven-day period, do it again. Making a list of foods such as bread, salad, starch, dessert, beverage, and alcohol is a good idea. You can compare each week with the previous to see if you are achieving some of your goals.
Addiction Model
You?re not only trying to lose weight and to feed the smaller person you are becoming, you are also trying to reverse the progression of the addiction model here. In a progressive addiction, the portion-size and frequency of usage keep escalating each time you build a tolerance for a particular food. The amount you need increases and the usage becomes more frequent. As you begin to lose weight, the portion-size of food and frequency-of-usage diminish in size, and number of hits.
Diminish Number of Times Each Day
The most frequently chosen items are bread, beverage, dessert, and alcohol. Some items may tally anywhere from zero to 15 and even 20, each week, or, anywhere from one to four times each day. If, for example, you choose any one item four times a day, cut it to three, then to two, then to once a day.
One of Four Or None
Strive to achieve having either Bread or Beverage or Dessert or Alcohol, picking only one of four or none per meal. If you are trying to eat a wide variety of foods, much of this will happen naturally.
Mental Repatterning
Talking to yourself is helpful as you choose each item less and less frequently. Think: ?instead of another piece of bread, I?ll have a vegetable.? Or, ?Instead of another cup of coffee, this time I?ll have a cup of hot water.? Remind yourself, hourly if necessary, ?I want to weigh __________ pounds.? Remember some of the action steps you can take to help you get there. The moments do pass. A helpful goal: Be pro-active rather than re-active. If you weren?t thinking of an item two minutes before seeing it, you?re responding to a visual stimulus rather than an actual physical hunger.
Portion Size
Get rid of that oversized mug and pour your coffee into a regular-sized cup. Perhaps you?ll feel fine with a few segments of grapefruit; a few bites of coleslaw. As you lose weight and your stomach shrinks, you should be filling up sooner and will require less of everything than you did when you were a bigger person.
Pick One No-Coffee Day
As item usage diminishes to once a day, the next step might be to pick one no-coffee day and/or, one no-bread day and/or, one no-alcohol day and/or, one no- __________ day. (Fill in your most frequently chosen item.) Writing your intention into your agenda book (or calendar) will be a reminder of what you?re trying to accomplish. If there are many items you choose more than three, four, times each week, pick one at a time and practice not having it one day a week before moving on to the next item. For example, Sunday could be a No-Coffee Day, Wednesday a No-Bread Day, and so on.
No Multiples
Another technique to aim for is No Multiples ? no second cup of coffee, no second drink, not another piece of bread after the first, and no second or third helpings, even if it is Thanksgiving. Remember, in a restaurant, you?d never say to the waiter: ?Maurice, is there another chicken leg in the kitchen.?
Skip-A-Day
As you lose weight and become smaller, your food requirements will be smaller, too. The next level would be to Skip-A-Day. If you had one category of food yesterday, don?t have it today. And if you have it today, don?t have it tomorrow. Skipping days will force you to seek more variety and ultimately lessen the hold some items have on you. Choosing any item three or four times a week works out well for most people, but for good health, red meat (beef) or cheese should be your choice no more than once a week.
If you are sensitive to refined flour most often found in bread and pasta, choosing it once every third or fourth day might work best. Choosing a baked potato, corn, or a yam every other day in lieu of pasta might be a better choice still.
Some days having a dark vegetable instead of another salad may be exactly what is needed and will help you achieve the Skip-A-Day suggestion.
If you select the same category of food every day, you?re eating it 365 days a year, and at the end of the year you?ll have eaten loaves of bread, vats of coffee, pounds of chocolate, gallons of soda, troughs of salad. By choosing these items every other day, you?re only having them 182 ? times a year. That shows up as a noticeable loss of weight and inches. Choose an item every third or fourth day and the results will be obvious that much sooner. Choosing the same foods all the time cheats you out of valuable nutrients you?d find in a wider variety of food.
Scatter
Shake it all up. If you have coffee at breakfast one morning, select it for lunch or dinner the next time, or not at all. This reduces your reliance on coffee to get you up in the morning. By Skipping and Scattering, you?ll get in the mind set of sometimes I have it, and sometimes I don?t. This helps prove that the opposite of ?I love this food,? is not ?hate,? but rather indifference.

When I drank alcohol regularly and frequented a restaurant near my apartment, the bartender actually knew my usual drink. I was embarrassed to know that someone was watching what I was eating and drinking, that my compulsive, ritual, behavior was noticed by someone else. More embarrassing was that the cashier in a local health and beauty aids shop knew my usual choice of candy.
I remember deciding to have a no-dessert (candy for me) day, and as I stood at the checkout counter, the cashier reached down to my favorite candy. He put the foil-wrapped bar on the counter, and said: ?You forgot your candy.? I was so embarrassed that I meekly paid for it along with my other purchases and left the store. Charting these foods might show this type of behavior but it might also show that you?re not having enough salads, starches, or dark vegetables, and those items might need to be increased.
Yes, I ate the candy, but the next time ? there?s always a next time ? I had repatterned enough that I was able to leave the store sans unplanned food. I kept reminding myself (mental repatterning): ?I?m not hungry, I only eat when I?m hungry, and besides, I want to weigh __________ pounds.

Experts have discovered that certain foods can actually help you to lose weight without the stress of dieting or exercise. The down side is that many of us have a tendency to dress these foods up with cheese, sour cream, butter or other calorie-laden flavor enhancers. This causes the weight loss effect to be lost. It may be difficult to not add extra calories to these foods but with a strong will power it can be done.
A negative calorie food can be defined as a food that results in a slimming effect for the body. In other words a carrot (without anything else) will cause your body to use an increased amount of energy when digesting it and other foods, this can lead to an overall reducing effect on the body. This is partly from the amount of energy it takes to digest the carrot or other “negative calorie food” and partly from the elevation in metabolism that these foods naturally create. The overall effect is a net loss of energy, which is measured in calories.
It should be understood that ?negative calorie? doesn?t mean that the food has zero calories in it, nor does it have an anti-calorie or a negative calorie.

Functional Foods and Nutraceuticals are designer foods and supplements that are combined with nutritional value that are disease-preventative and have medicinal benefits. These are usually natural products which may reduce or prevent chronic and acute disease or promote good health.
Many chronic and acute diseases are caused or irritated by nutritional imbalances or deficiency. The link between diet, disease and the ability to process thought are sometimes subtle and complex. There are certain categories of food that will cause bad breath. You know some of them, but do you know them all? Some of our favorite foods can create a breeding ground for volatile sulfur compounds the root of all bad breath problems. Learn all about each of the food categories, how they cause bad breath, and what you can do to stop the bad breath culprits in their path!
Did you know that there are specific foods that may lead to bad breath? This is because of volatile sulfur compounds - the culprit in causing bad breath!
For example, if food sits out too long it will spoil. That spoiling action is due to anaerobic bacteria breaking down proteins in that particular food. In milk, the odor of sour milk is caused by relatives of the bugs that create bad breath when they break down proteins in the milk (and basically in all dairy foods). A reaction takes place where ‘the bad breath bugs’ extract sulfur compounds from the amino acids in these proteins. Specifically, the amino acid Cysteine is converted to Hydrogen Sulfide (which has a rotten egg smell) and Methionine becomes Methyl Mercaptan (which smells like a cross between old socks and garlic). The same analogy applies to meat if it sits out too long.
Everyone knows that onions and garlic will create bad breath. But do you know why? It’s because the odorous molecules in onions and garlic are actually sulfur compounds themselves called Mercaptans. Sulfur is nature’s way of creating odors. You’re all familiar with the skunk. Its odor is created by a defense and/or attack mechanism. Skunk odor is made up of skatoles, which are naturally occurring sulfur compounds. In a similar fashion, bacteria in your mouth creates the volatile sulfur compounds of bad breath and taste disorders.
There are 4 food categories that will result in an increase of sulfur production because these categories have a stimulating affect on the bacteria that cause bad breath:
1. Drying Agents
2. Dense Protein Foods
3. Sugars
4. Acidic Foods
Let’s look closely at each of these food categories and how they stimulate bad breath!
DRYING AGENTS
The most common drying agent in food is alcohol. Alcohol of course, is the basis of all “adult” beverages such as beer, wine, and hard liquor. It is also used, unfortunately, in many mouthwashes you find in the grocery stores, which only makes a bad breath problem worse.
Alcohol, known chemically as a desiccant, is used quite often in laboratories to “dry out” hard to reach areas in test tubes and beakers. The same end result takes place in the oral cavity.
Although cigarettes are not really food, smoking is probably the quickest way to dry out your mouth, with alcohol being the second. If you smoke, you are bound to have bad breath!
DENSE PROTEIN FOODS
Dairy foods are notorious for creating bad breath. An article that appeared in the “Los Angeles Times” once noted that over 50% of the population in Southern California was “lactose intolerant”. With regards to bad breath, many of these people (numbering in the tens of millions) end up with more dense proteins available as bad breath fuel for the bacteria than those who have no problem with dairy foods like milk, cheese, yogurt, ice cream, etc. The end result is a buildup of amino acids, which are easily converted into volatile sulfur compounds by the anaerobic bacteria found within the surface of your tongue and throat.
To a lesser extent, people have the same problem with other types of food that are considered to be dense in protein such as beef, chicken, and fish.
Another problem, thankfully rare, has to do with people who have an inability to break down certain proteins found in beans. This condition is called TMA (Trimethylaminuria) and is sometimes known as the “Fish Odor Syndrome,” because the odor produced is similar to decaying fish. The odor consists of sulfur compounds, plus nitrogen compounds (amines). People with this condition must abstain from beans and other types of food that are dense in protein.
SUGARS
Wouldn’t it be great if we could get rid of bad breath by chewing on M&Ms? Or what if the cure for bad breath were Hershey Kisses?
That’s what the makers of Altoids would have you believe. Altoids, and other products of the same ilk, are trying to fool the public into believing that a strong “good” taste in your mouth is equivalent to the “freshness” of your breath. This is so anti-scientific it’s absurd! If you think about it for a minute, it really doesn’t make any sense.
By using concentrated mint flavorings, your taste buds pick up mint as a taste. However, Altoids contains two types of sugar which again, are a fuel for the bacteria to reproduce and create more sulfur compounds - thus bad breath. In addition, the frightening part is that other bacteria can take the sugars and produce glycan strands, which in turn end up causing thick layers of plaque on the enamel of your teeth and around your gums. This leads to tooth decay and gum disease - and you guessed it - worse breath than you started with!
Since you can’t smell your own breath, you just go merrily along with that great strong mint taste in your mouth, while others close to you are backing away - backing away from your increased bad breath, decayed teeth, and gross, swollen, bleeding gums!
Stay away from candies, mints, and chewing gum if they contain sugar! Instead, let me recommend an alternative created by TheraBreath called the TheraBreath Oxygenating Chewing Gum (http://www.therabreath.com/products.asp?CAT=5). ACIDIC FOODS
Foods with a high acidic content are a problem as well. pH is a term used to describe the acidity of an environment. The oral cavity has a normal pH of 6.5 (7 is considered neutral). Some of the foods you should watch out for are coffee and many citrus juices. Both decaffeinated and regular coffee contain acids. However, tea is okay. Among the citrus juices the ones with the highest acidic content include tomato juice, orange juice, pineapple juice, and grapefruit juice.
We know that acids make the bacteria reproduce much faster. In order to decrease the production of odorous sulfur compounds, the acid environment needs to be neutralized.
What can you learn from all this? Avoiding foods that contribute to, if not cause, bad breath is vital if you want to have clean fresh breath. While this is a difficult task, being aware of these bad breath causing elements is the first step in developing confidence in your breath. I have eaten some weird and wonderful dishes around the world but some of the more interesting concoctions have been served up to me in China.
A particularly interesting delicacy I ate some years ago consisted of Cow’s bronchial tubes - the airways between the cow’s lungs and windpipe (gruesome!) in a light white wine sauce.
The appearance of a plate full of macaroni, the taste of nothing but the white wine sauce and the consistency of over-cooked calamari, you could describe this dish as the original Chinese chew recipe!
Another time I was served with a plate of vermicelli with 20 or so delicately arranged deep-fried crispy scorpion complete with sting!
The trick to eating this particular delicacy was to convince myself it was nothing more than a prawn and all I had to do was to pick it up with my chopsticks and slip it into my mouth.
Actually once I had said to myself ?it?s a prawn, it?s a prawn? 20 times this was not such an ordeal and basically the texture was, well, just crisp! and the only taste was of the oil it had been fried in, not so much of a Chinese chew, more of a Chinese crisp!
But Cow?s bronchial tubes and deep fried crispy scorpion are not the most gruesome dish I am aware of.
I say aware of rather than ate because even me with my cast iron constitution couldn?t stomach what I am about to describe to you. Anyway I am not sure if it?s just a popular folklore or if people really did this. I am sure it must be illegal now, if its not it should be!
Legend has it that, particularly in the southern parts of China, people had a specially designed ritualistic table with a hole in the centre, just big enough to take the upper part of a Monkey?s head.
Apparently the ritual consisted of capturing a live Monkey and securing it with it?s head wedged up in to hole in the centre of the table. The next step in the ritual was to trepanne the top of the live monkeys? skull off and pour boiling water into the Monkey?s brain.
People sitting around the table would then proceed to eat the braised Monkey brain with chopsticks directly out of the Monkey?s skull.
I did warn you it was gruesome ? it can?t possibly be true, can it?
Fortunately the dishes that we are more familiar with are not quite so outlandish and use much more traditional ingredients. There are many easy Chinese recipes on the Chinese food menu, just as well really because I don?t know about you but I think I must be part Chinese as I love the food and all about the place.
